Lent Fish Ideas

For those observing Lent, we’ve got some ideas to spice up your fish meals. Here are five ways to make your fish… delish!

(1) Cook simple salmon steaks, by squeezing lemon juice over the fish and adding olive oil. Sprinkle on dill, salt and pepper – then stick it in the oven at 350 degrees until cooked. If the fish flakes when you poke it with a fork, you’re done.
(2) For a traditional fish fry – coat a fillet in egg, then flour, egg again and some panko. Fry it up in some safflower or coconut oil.
(3) Put a Mexican spin on your dinner by creating fish tacos, paired with red cabbage slaw and fresh guac.
(4) Wrap it in parchment paper with olive oil, tomatoes, zucchini and artichoke hearts.
(5) Dab some pesto on your fish, and serve with angel hair pasta and a side salad for a light dinner.
