While we are a few days late to make Mother’s Day menus, you can still reap the benefits of the amazing fruits and vegetables available at this time of year. As we come to the end of citrus availability, consider ways to preserve the refreshing tastes of spring. Why not make a few jars of meyer lemon curd to enjoy on scones in the summer sunshine – or squeeze some extra oranges to freeze pure juice?

An exciting development of late Spring is the growing availability of stone fruit. Once we start to see peaches, apricots and plums, the possibilities of recipe ideas are endless. Chop them up and serve with Greek yogurt for an afternoon snack, or atop oatmeal for breakfast. Then there’s pie… peach pie season is amazing!
