Healthier Southern Style Fried Chicken

Are you looking for a healthier version of Southern Fried Chicken? No doubt we all enjoy biting into a fresh, crispy hot piece of chicken – but we all know it’s not good for our bodies. This week we have a recipe that you can try at home, and not completely fall off the wagon.

Firstly, use only chicken legs and thighs for best results. Bring a big pot of chicken stock to a boil, making sure it is a good quality, well seasoned broth. Add the legs and thighs to the simmering stock, and cook until the meat is soft and almost falling off the bone. Make a whole raw egg mix to use for the coating, then roll in Panko bread crumbs.

Heat oil in a pan to a temperature between 375-400 degrees, and fry the chicken pieces until golden brown. When the chicken is ready, drain excess oil on a paper towel and season with Lawry’s Seasoning Salt.

Serve fresh, with coleslaw, chili Ranch sauce and mashed potatoes!
