Making the Most of Your Pantry

Be honest – how often do you look into your full pantry and declare that you have nothing to eat? Using what’s in your pantry not only cuts down on food waste, it’s one way that you can stretch your creativity and your budget at the same time. Here are some fresh ways to use three commonly overlooked pantry items:

  1. Black Beans
    Cuban-Style black beans can be whipped up in a flash, by sauteing onions, garlic and green bell peppers. Add some cumin, season with salt and pepper and pour in the canned beans. Fry some plantains, adding brown sugar if you prefer them a little sweeter. Serve with rice.

  1. Corn Kernels
    Corn Fritters are basically pancakes filled with kernels of canned corn. Kids tend to love these, on their own or part of a meal.

  1. Canned Tuna
    Let’s not reinvent the wheel – check out the recipe for Tuna Risotto Pie. Who knew gourmet could come from a can of tuna?
