Panang Curry Recipe

There’s nothing quite like a fresh, steaming hot plate of Panang Curry served over white rice. A favorite menu item at many Thai Restaurants, Panang Curry offers salty, sweet, and nutty flavor profiles that you can reproduce at home. Catering Central’s Signature Panang Curry

Ingredients:

  • Mae Ploy Red Curry
  • Fresh garlic
  • Fresh ginger
  • Fresh Thai basil
  • Fresh Kaffir lime leaf
  • Fish sauce
  • Coconut milk
  • Sugar
  • Salt

Method:

  1. Lightly fry ginger and garlic until aromatic (about 1 minute)
  2. Add Mae Ploy Panang Paste and lightly fry
  3. Add coconut milk and bring up to a light boil
  4. Add thinly sliced Kaffir lime leaf
  5. Season with fish sauce
  6. Add sugar to find balance between sweet and salty
  7. Once balanced, finish off with pinches of salt.
  8. Lastly, add your Thai Basil and you are complete

Notes: This dish can be made with pre-cut blanched chicken for Thai Chicken Coconut Curry or fried tofu and blanched vegetables for a Vegetarian Thai Coconut Curry. Omit fish sauce for strict vegetarians.
