Pan Searing the Perfect Steak

Cooking the perfect steak indoors is a skill that’s developed through many attempts – and just as many failures. If you know the steak you’re making at home isn’t restaurant-quality and you’d like to up your pan-searing game, we have three steps to help you out.

  1. Prep
    Take your steak out of the refrigerator at least 30 minutes before cooking. Pat it down with paper towel before brushing down with olive oil and seasoning both sides with salt and pepper.

  1. Cook
    Pre-heat your oven to 375, and heat a heavy pan (preferably cast iron) for a few minutes until it’s hot. Ensure that your kitchen fan is on, to avoid the inevitably smoky situation that happens when searing steak inside the house. Carefully remove pan from the oven and transfer to the stovetop. Sear the steaks for 2 minutes each side and transfer to the oven (in the pan) for around 10-13 minutes.

  1. Rest
    Letting meat rest is absolutely essential. Resting serves to provide the steak with more flavor, allowing the juices to become one with the meat rather than escaping onto the plate. Check out this resting guide at Serious Eats.
