Seasonal Salads

Since we explored the fresh local produce of Spring last week, this week we will be thinking about some ways to make your daily salad seasonal. By adding a few of these ingredients to your bowl or plate, you’ll be making the best of what Mother Nature provides at its most delicious time.

 

  • Peas
    Who doesn’t love the ‘pop’ of a fresh pea in their salad? Whether it’s sugar snap, english or snow peas, these fresh green orbs don’t only taste great, but also help protect you from stomach cancer, help prevent Alzheimer’s, and assist in weight management.

  • Baby Carrots
    You might think of these as a year-round snack, but boy do they taste better when they’re in season! Dip them in hummus, ranch, or spinach dip for an afternoon snack.

  • Edible Flowers
    You may never have eaten flowers before, but edible ones like nasturtiums aren’t only beautiful, but they pack a nutritional punch too. Forage for them where you know they’re safe (and double check they’re definitely nasturtiums) or find them at your local farmer’s market.

Survey Monkey “Favorite Foods” Menu

Our good friends at SurveyMonkey decided to curate a small recipe book of foods that their employees have enjoyed from across the globe. We decided to give it a go and for the company’s first lunch of the New Year (2017) we served them a customized menu using their ideas at the new office building in San Mateo, California. Healthy Soup at Home

While opening a can of soup is easy, there’s always something “canned” about the flavor. It’s also widely known that canned soup has an exorbitant sodium content – but did you know all that salt is keeping the soup from spoiling? Homemade soup can be as salty or plain as you make it, giving you a delicious meal without compromising your health. Also, if there’s too much – great! Freeze in individual portions for that ‘heat and serve’ convenience you’re looking for.  

Here are three soups we make at Catering Central, that you can replicate at home:

  1. Butternut Squash
    Simply roast and puree, add chicken broth, mirepoix, thyme, salt, and pepper. 
  2. Bean Soup
    Any 2-3 types of beans you desire, mixed with broth, seasonings, and a leafy green (e.g. kale, spinach etc.) will produce a delicious bowl of healthy, wholesome soup.
  3. Hearty Minestrone
    Tomato, broth, diced vegetables, and pasta – a recipe for a filling, nutritious meal.

If you’ve been keeping up with our blog, you might remember that we featured some fish recipes for Lent last year (find them here http://www.cateringcentral.net/2014/03/14/lent-fish-ideas/). In keeping with tradition, we have some different recipes for you! No matter what your beliefs may be, if you’re a fish-eater, you’ll get a kick out of these recipes.

  1. Top your grilled fish with a salsa of your choosing. Try peach salsa if you’re looking for sweetness – or something with fire if you’re looking for heat!

  2. Slice your grilled fish and put it in a salad with some quinoa and pecans.

  3. Who doesn’t love chowder? Add some fish and sweet corn to this creamy dish.

  4. Salmon cakes are ultimate comfort food – add a side of tzatziki and greek salad.

  5. Make a sandwich! Bread it and serve it just like fast food – but healthy!

  6. Tuna salad on crackers – if you’re steering clear of carbs, try it atop cucumber coins.

  7. Glaze it! Bourbon glaze, honey soy, honey mustard – just get glazing.

  8. Add it to skewers with grilled veggies.

  9. Don’t bread it, nut it. “Bread” with almond flour and cut the carb content.

  10. Make a Thai-style coconut fish curry, and serve on a bed of Jasmine rice.
